Ice Cream Cupcakes

I'm back with another baking post and it's another sweet treat. My mum made these for her work at christmas time and I've been meaning to make them for myself but just hadn't got round to them until now!

It's pretty simple all you need is some Ice Cream cones but you need the flat bottomed ones so they can stand in the muffin tray whilst they are baking. Either make your cake mix from scratch or like me I just trusted good old Betty Crocker. I decided to go for Red Velvet as a bit of a difference. Then I  had a can of Betty Crocker cream cheese icing spare or of course you can whip up your own.

Mix up your cake mix then pour into the cones. I went about 3/4 full so they didn't rise over the top and they turned out perfect. Then once cooled apply your icing. I did try my hardest to make it look like ice cream but i'm still practicing on my piping skills. I chose to decorate mine with chocolate chips because I didn't have any flakes to hand but with a flake stuck in it really looks like a cute little 99!

These would be perfect for a birthday party or a summer party to have as little snacks. Have you ever made these? If you have let me know!

Pancakes With A Sweet Twist

Happy Sunday Lovelies
I've got so many blog posts in the pipe line which I can't wait for you lot to see including one on my first ever Bbloggers event I went to which was held for the first time in my little hometown of Brighton. I met some lovely ladies and I was actually quite amazed how many local bbloggers there were near me! But more on that later. Today's post is a little different. As I mentioned before I'm trying to branch out my little beauty blog into the wonderful world of fashion and lifestyle. So to help me along with it today I thought I would show you what I had for breakfast.... Pancakes with a twist.

When I woke up this morning my sister had made a pancake mix and had left me some. I didn't fancy plain pancakes and I remembered that I had some Peanut Butter M&M's left over and only the day before had someone on my facebook posted a picture of their M&M pancakes. So that's what I did and omg were they AH-MAZE-ING.

They were the best pancakes I've ever tasted. The M&Ms had all melted and were so soft.

Have you ever experimented with pancakes?

I have a mad love for the USA! I love their culture, lifestyle and most importantly FOOD! So when me and my mum found out there was an online store which sold food from across the pond we were so excited. We have a Cyber Candy where we live but I haven't been there for a couple of years as it's a bit out of the way from town and there's no parking by it. So when me and mum found another site which has two stand alone stores in Guildford and Aldershot we were more then ready to get in the car and visit them. So today I thought i'd show you what I purchased.

A Tutorial With A Bite....

Evening Lovelies...
I know my blog is one of beauty but I thought it would be nice to break it up a little bit and throw a few non beauty related posts into the mix. Tonight I want to share with you the dessert I made tonight. It is most definitely a don't look at the calorie content dessert but it is nice to treat yourselves every now and then when we have all worked hard.

Ingredients....
  • 250g digestives
  • 75g soft unsalted butter
  • 400g jar Nutella, at room temp
  • 100g chopped mix nuts
  • 500g cream cheese, at room temp
  • 60g icing sugar

Method....

Step 1: Break the digestives into the bowl of a processor, add the butter and a 15ml tablespoon of Nutella, and blitz until it starts to clump. Add 25g of the nuts and continue to pulse until you have a damp, sandy mixture.

Step 2: Tip into a 23cm round springform and press into the base either using your hands or the back of a spoon. Place in the fridge to chill.

Step 3: Beat the cream cheese and icing sugar until smooth and then add the remaining Nutella to the cream cheese mixture, and continue beating until combined.

Step 4: Take the springform out of the fridge and carefully smooth the Nutella mixture over the base. Scatter the remaining 75g of chopped nuts on top to cover and place tin in fridge for at least four hours or overnight. Serve straight from the fridge for best results.

I sourced this recipe from here. It's such a delicious treat if you love all things sweet and so easy, there is no baking involved. Just pop it in the fridge to chill. I love making this for my family and I'm pretty sure they have enjoyed eating it. If anyone tries out this recipe let me know how you get on. Enjoy...
